Our bartender's insistence, over the objections of everyone else who works here. Chocolate, caramel taken far past the point most people would stop, and a bitter orange amaro, served short and very warm in a heavy glass. It should not work. The bitterness arrives last, after the sweetness has already convinced you it is a dessert, and that reversal is the entire trick. It is the most expensive drink on the trail and the one we are most likely to be remembered for. Not for the faint-hearted, and genuinely not for anyone who wanted a hot chocolate.

The Negroni's argument, made without the alcohol. Dark chocolate, caramel taken to the edge of burnt, and the peel of three Seville oranges left in the pan long enough to turn the whole thing faintly medicinal. The bitterness still arrives last, which was always the trick, and it turns out the amaro was doing less of that work than our bartender liked to claim. We serve it in the same heavy glass, short and very warm. Regulars who cannot drink order it and then tell us it is better. They may be right.
