  The story

  Chocolate infused with lapsang souchong for exactly four minutes — any longer and it turns into an ashtray, which we established the hard way — and finished with a cinnamon stick charred on the grill until it catches. It arrives smelling of a bonfire before you have tasted anything at all, and half the pleasure is in that first lungful. Underneath the smoke it is a fairly classic dark hot chocolate, quite thick, not very sweet. We serve it in a small cup because it is intense, and because a large one would defeat most people halfway.
