    The story

    We reduce a local oatmeal stout down by half over an hour, which drives off most of the liquid and leaves something closer to a syrup, then stir it into hot chocolate until the whole thing turns almost black. It tastes like pudding and drinks like a pint, which is a combination we did not entirely intend. The roasted barley in the stout lines up with the roast in the cocoa, so it reads as one flavour rather than two things fighting. Contains gluten, and no, there is not a version that does not.

    The story

    Everything the stout version does, without the stout. We steep roasted barley the way you would steep tea, strain it, and use that instead of half the milk, which gives the same toasted bitterness the beer was contributing. Whole milk, dark chocolate, a pinch of salt. It still contains gluten because the barley is the entire point, so it is not the safe option it looks like. What it is, is the one you can have two of and still walk home in a straight line, which over a seven-week trail turns out to matter.
