Milk chocolate under a raft of marshmallows we make here on Tuesdays, blowtorched to order at the counter so you can watch it happen. This is the least sophisticated drink on the trail and easily the most popular. The marshmallows are set with egg white rather than gelatine, so they toast to a proper skin rather than melting into the cup, and they are cut thick enough to still be soft underneath when you get to them. Children's eyes go enormous. So, in our experience, do the eyes of adults who arrived saying they were not hungry.

A December-only experiment that stayed. The house hot chocolate with a measure of spiced Norfolk gin, the botanicals of which land somewhere near mulled wine without any of the sourness, and a torched marshmallow the size of a matchbox on top. The gin is added off the heat so it keeps its edges. It is sweeter than most of the alcoholic drinks on this trail and considerably less serious, which is deliberate: not everyone who wants a drink with rum in it wants to be told about the distillery.
