    The story

    We burn local honey down in a copper pan until it stops smelling of flowers and starts smelling of toffee, which takes about twenty minutes and one ruined pan a year. That goes into single-origin Ecuadorian chocolate with whole milk, steamed rather than boiled so it never catches. Flaked sea salt on top, added at the last second so it is still crunching when it reaches you. It began as a mistake in the winter of 2019 when someone left the honey on the heat, and it has been on the menu every December since. People ask for it in July.
