    The story

    Dark chocolate, black treacle and a rum distilled four streets from this bar, stirred together over a low heat until the whole thing goes glossy. We float burnt cream on top, which is exactly what it sounds like: cream scorched under a blowtorch until it blisters. The treacle is the part people remember. It gives the cup a faint bonfire-night quality, somewhere between parkin and toffee apple, and it stops the rum from being the loudest thing in the glass. Strong. We serve it short, and we will not make it larger, however nicely you ask.

    The story

    The one we make for the people driving everyone else home. Oat milk steamed to just under a scald, dark Ecuadorian chocolate, and a spoonful of hazelnut praline we grind here on a Tuesday because that is when the kitchen is quiet. It is stirred rather than frothed, so it stays thick enough to coat a spoon, and it arrives without a lid of foam hiding what is underneath. No rum, no substitute for rum, and no apology for either. It outsells the Treacle on a wet Sunday afternoon, which surprised us more than it should have.
