    The story

    Sea salt harvested on the north Norfolk coast, about forty miles from this room, and a seventy percent Madagascan chocolate with an unusual amount of red fruit in it — raspberry, mostly, which surprises people who assume dark chocolate only tastes of dark chocolate. The salt is added to the milk rather than sprinkled on top, so it runs through the whole cup evenly instead of arriving in bursts. Bracing, in roughly the way a walk on the marshes in January is bracing. Several people have told us it tastes like the coast, which we have decided to take as a compliment.
